人体需要三大营养素:蛋白质、碳水化合物、和脂肪,它们的比例是决定你胖瘦及健康的最重要的因素。

人们并不真正知道什么是碳水化合物。大部份人会说碳水化合物是糖和淀粉。如果被问到蔬菜和水果是什么,他们会说蔬菜就是蔬菜,水果就是水果,就是无论吃多少都不会胖的食物。其实它们都是碳水化合物,碳水化合物只有简单(如糖)和复杂(许多简单的碳水化合物连结在一起)之分。
身体有两个储存肝糖的地方:肝脏和肌肉。储存在肌肉的肝糖无法释放葡萄糖供大脑使用,只有储存在肝脏的肝糖可以提供给大脑使用。但是,肝脏所能储存的肝糖十分有限,通常在10至12个小时就可消耗完毕。所以我们必需持续补充碳水化合物。问题是,如果摄取太多碳水化合物会发生什么事?答案是会储存在肝脏和肌肉,但别忘了,这两个地方的容量有限。肌肉可储存300至400克碳水化合物,但你的大脑无法使用它;肝脏只能储存60到90克碳水化合物。
一旦肝糖的容量被填满,过剩的碳水化合物就只有一个命运:转变成脂肪储存起来所以,即使碳水化合物本身是无脂肪的,但过剩的碳水化合物就会造成过多的脂肪。更糟的是,任何高碳水化合物的一餐都会让血糖急速上升,胰脏就会分泌胰岛素来降低血糖。




胰岛素是一种储存贺尔蒙,它会把碳水化合物变成脂肪储存起来,换句话说,我们吃越多碳水化合物,血糖就越高,胰岛素就越多,你就越会储存脂肪。
还有更糟的,胰岛素除了让过剩的碳水化合物以脂肪的形式储存,它还保护已生成的脂肪,不让它们燃烧,让你根本无法使用身体储存的脂肪作为能源。
胰岛素让你的细胞可以利用一些血糖做能源,这是有必要的,但也让你过度依懒碳水化合物而减少使用脂肪做能源。如果你想要用脂肪当能量,你必需调整你的胰岛素反应。
胰岛素会制造饥饿。吃了高碳水化合物的一餐之后,血糖上升,胰岛素上升,不到两个小时血糖就下降了。血糖下降就会造成饥饿,你就会开始想吃东西,尤其是糖和淀粉。
